Malt is the word that is specifically used for drinks made with sprouted grains. In layman language, Malt is the germinated cereal grain that has been dried and maden in a process known as "malting". Ragi is particularly a nutritive millet that resembles mustard seeds in appearance and it contains the organic compound essentials amino acid methionine.

Ragi Malt - This nutritional drink can be made with both sprouted ragi flour and ragi flour. Also milk or water, any of them can be used. Some people don't use milk as milk makes the malt heavy. But you can use milk as well if it suits your taste and diet.
Ragi malt can be made in 2 ways. It can be made both sweet and savory. Today we are making the sweet version. For the savory version, ragi mixture is soaked and cooked in water. Then after it cools down, in this ragi mixture, buttermilk is added along with some more ingredients like cumin powder, onions, curry leaves etc . And here you will get a refreshing and cooling drink.
Time for sweet ragi malt recipe.
Add ragi flour to a pan.
Pour water in the pan.
Mix water and flour well so that there are no lumps left in it. Begin to cook and stir often on a medium flame to prevent the formation of lumps. Using this technique will make ragi malt smooth and without any lumps.
Keep stirring and cook until the prepared mixture gets glossy and thick.
Now it's time to add jaggery or any other sweetener as per your liking. Jaggery can be added in the ragi malt instead of sugar. But in the absence of jaggery, you can also use sugar.
You can conjointly add milk here. Then slowly mix milk to the mixture.
Keep stirring and then add dry fruit powder or almond powder. I always add cardamom powder and a few almonds or cashews.
