Wheat is a cereal grain which is widely grown and consumed all around the world. The major components of wheat are proteins, starch and cell wall polysaccharides which together account for a major portion of wheat. The rest is the combination of minor components such as vitamins, minerals, etc. Wheat malt grain is most commonly used in malt extract liquid/ Liquid Malt Extract, muffins, breads, noodles, pastries, crumpets, biscuits, cakes, , Biscuit Confectionery Grade Malt Extract, cereal bars, sweet and savoury snack foods, sauces, brewing and various other alcoholic and nonalcoholic beverages.


Beer and beverages use both malted and unmalted wheat grains depending on requirements. But ever wondered how malted wheat grains are different from unmalted wheat grains? 

Malted Wheat

The diastatic enzymes present in malted wheat helps convert starch into sugars during mashing which gives it a unique flavour and makes it a creamy, doughy tasting wheat flour. Similar to barley malt, the flavour compounds are developed during the process of kilning. Grains go through the process of steeping, germination and killings before they are used by brewers.

Unmalted Wheat

Unlike Malted wheat, it does not undergo any process of malting which is why it is known as the raw version of wheat. The amount of starches are same to that of malted wheat but unmalted wheat can not convert starches into sugars by itself. For sugar conversion, it needs to be mashed with base malt.

Malted Vs. Unmalted wheat

Process - Malted Wheat is fully modified wheat and thus becomes malted grains whereas unmalted wheat is not modified and thus needs extra efforts to convert scratch to sugars for brewing.

Self-Conversion - Malted Wheat can get self converted due to the availability of diastatic enzymes. On the other hand, unmalted wheat can not go through self conversion.

Flavour - Unmalted wheat makes fuller beers which are less sweet and have a refreshing taste. It has strong flavour and is used for adding flavour, cloudiness and creamy texture to the beer. On the other side, Malted wheat has a citrusy and acidic taste which gives it a complex flavour.
